We've always preferred canning to drying. Of course, you're not going to can rice,or most beans or peas. But we only kept dried corn around long enough to find the time to can it. In my experience, if there's a single mold spore and a drop of water around, it's going to find its way into our dried corn.

Canning jars are expensive, but you only pay for them once. The lids you can only use once, but they're pretty cheap,and you can sometimes get them cheaper when you buy a few hundred at a time.
